  • 20 oz refrigerated cheese ravioli
  • 24 oz jar marinara sauce
  • 3 packed cups baby spinach
  • 1½ cups shredded mozzarella
  • ¼ cup grated Parmesan

Pantry basics: ½ cup water, a little olive oil, black pepper, and optional dried Italian seasoning.

Instructions

  1. Start the sauce. Heat an oven-safe skillet over medium heat with a tiny drizzle of olive oil. Add marinara and ½ cup water, then bring to a gentle simmer.
  2. Wilt the spinach. Stir in the baby spinach a handful at a time until just wilted, about 2 minutes.
  3. Add the ravioli. Nestle the ravioli into the sauce in an even layer. Spoon sauce over any exposed pieces. Cover and simmer gently for 8 to 10 minutes, or until the ravioli is tender.
  4. Make it lasagna-ish. Sprinkle mozzarella and Parmesan over the top. Cover for 2 minutes to melt, or broil for 2 to 3 minutes if your skillet is broiler-safe and you want browned bubbly spots.
  5. Rest. Let it sit for 3 minutes before serving. This is less about patience and more about preventing molten-cheese regret.
