15-Minute Cheesy Pasta & Egg Skillet Recipe

Ingredients
- 3 cups safely refrigerated cooked short pasta
- 8 large eggs
- 2 cups baby spinach
- 3/4 cup grated Parmesan cheese
- 1 cup mild marinara sauce
Pantry basics: a little cooking oil, salt, and pepper.
Instructions
- Warm the pasta. Lightly oil a large nonstick skillet over medium-high heat. Add cooked pasta and cook 2 to 3 minutes, stirring occasionally, until hot with a few crisp edges.
- Add spinach. Stir in spinach for about 1 minute, until just wilted.
- Add the eggs. Beat eggs with a pinch of salt and pepper. Pour into the skillet and reduce heat to medium.
- Cook through. Stir gently for 3 to 4 minutes, folding the pasta through the eggs, until the eggs are fully set and reach 160°F (71°C).
- Finish. Sprinkle with Parmesan. Warm marinara separately in the microwave and serve it on the side or spoon it over individual portions.
