15-Minute Egg & Black Bean Tacos Recipe

Ingredients

  • 8 large eggs
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 small flour or corn tortillas
  • 1 cup shredded cheddar or Mexican-style cheese
  • 1/2 cup mild salsa
  • Salt and pepper, optional pantry staples

Instructions

  1. Warm the beans. Add the drained black beans to a large skillet over medium heat with 2 tablespoons water. Cook 2 to 3 minutes until hot, then move them to one side of the skillet or a bowl.
  2. Scramble the eggs. Beat the eggs with a pinch of salt if using. Add them to the skillet and cook over medium-low heat, stirring gently, until softly set.
  3. Warm the tortillas. Warm tortillas according to package directions or briefly in the dry skillet.
