20-Minute Beef & Bean Taco Pasta Recipe

5 Main Ingredients

  • ¾ pound lean ground beef
  • 8 ounces small pasta shells
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) petite diced tomatoes, with juices
  • 1½ cups shredded cheddar or Monterey Jack

Pantry basics: 2 tablespoons mild taco seasoning, 2 cups low-sodium beef broth, and black pepper.

Instructions

  1. Brown the beef. Cook the beef in a large deep skillet or pot over medium-high heat for 4 to 5 minutes, breaking it into small pieces. Drain excess fat if needed.
  2. Build the pot. Stir in taco seasoning, pasta, beans, tomatoes with their juices, and broth.
  3. Simmer. Bring to a boil, reduce to a lively simmer, and cook uncovered for about 8 to 10 minutes, stirring often, until the pasta is tender. Add a splash of water if the pot dries before the pasta is done.
  4. Finish. Remove from heat and stir in 1 cup cheese. Sprinkle the remaining cheese on top, cover for 1 minute, and serve.

Safety note: Cook ground beef to 160°F (71°C) and refrigerate leftovers within 2 hours.
