30-Minute Beef Taco Rice Skillet Recipe
Serves: 5 to 6 servings · Prep: 8 minutes · Cook: 22 minutes · Total: 30 minutes
Ingredients
- 1 pound lean ground beef
- 1 small yellow onion, diced
- 2 tablespoons mild taco seasoning
- 1 cup long-grain white rice, rinsed
- 1 can (14.5 ounces) diced tomatoes, with juices
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup frozen corn
- 2 cups low-sodium beef broth
- 1 cup shredded cheddar cheese
- Optional for serving: plain yogurt, avocado, cilantro, or hot sauce
Instructions
- Brown the beef. Heat a large deep skillet over medium-high heat. Add the beef and onion, breaking the meat into small pieces, and cook for 6 to 7 minutes until no pink remains. Drain excess fat if needed.
- Season the skillet. Stir in the mild taco seasoning and rinsed rice. Cook for 1 minute so the rice is coated.
- Simmer. Add the tomatoes with their juices, black beans, corn, and broth. Bring to a boil, then reduce to low, cover, and simmer for 16 to 18 minutes until the rice is tender.
- Finish with cheese. Remove from the heat, fluff gently, and sprinkle the cheese over the top. Cover for 2 minutes until melted, then serve with optional toppings at the table.
Safety note: Cook ground beef to 160°F (71°C). Refrigerate leftovers within 2 hours.

Make It Cheaper
Replace half the beef with another can of black beans or pinto beans. Frozen corn is usually more economical than fresh.
Make It Kid-Friendly
Keep the seasoning mild and let children choose cheese, yogurt, or avocado at the table. Serve components slightly separated on the plate if helpful.
Use What You Have
Use pinto beans instead of black beans, vegetable broth instead of beef broth, or frozen mixed peppers instead of corn.
Lowest-Effort Shortcut
Use frozen diced onion and a pre-shredded cheese blend. Measure the rice and seasoning earlier in the day.
Leftovers Tomorrow
Refrigerate for up to 4 days. Reheat with a spoonful of broth or water. Spoon leftovers into tortillas, over lettuce, or into a lunch container with extra cheese.
Freezing
Cool completely and freeze in meal-size portions for up to 2 months. Thaw overnight and reheat until steaming hot.
