Ingredients

  • 8 medium flour tortillas
  • 2 cups shredded cooked rotisserie chicken
  • 2 cups shredded cheddar or Monterey Jack cheese
  • ½ cup mild salsa, plus more for serving
  • 1 teaspoon olive oil or butter, divided

Instructions

  1. Build the quesadillas. Place four tortillas on a work surface. Divide the chicken and cheese over them, keeping the filling about ½ inch from the edges. Spoon mild salsa over the filling, then top with the remaining tortillas.
  2. Heat the skillet. Warm a large nonstick skillet over medium heat and brush it lightly with oil or butter.
  3. Cook until crisp. Cook one quesadilla at a time for 2 minutes per side, pressing gently, until golden and the cheese has melted. Add a little more oil between batches if needed.
  4. Rest and slice. Move each quesadilla to a board for 1 minute before cutting into wedges. Serve with extra salsa at the table.

Safety note: Use freshly purchased or properly refrigerated rotisserie chicken and reheat the filling until steaming hot, ideally 165°F (74°C).
