Creamy One-Pan Chicken & Rice Recipe

Ingredients
- 1¼ pounds thin chicken cutlets (about 4 to 5)
- 1 teaspoon kosher salt, divided
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper, plus more to serve
- 1 tablespoon olive oil
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1½ cups low-sodium chicken broth
- 1 cup evaporated milk
- 2 cups instant white rice
- 1 cup frozen peas
- ½ cup finely grated Parmesan
- Optional: chopped parsley and lemon wedges
Instructions
- Season the chicken. Pat the cutlets dry. Season both sides with ½ teaspoon salt, the garlic powder, and black pepper.
- Brown the chicken. Heat the oil in a large, deep skillet over medium-high heat. Cook the chicken for 3 to 4 minutes per side, until golden and the thickest part reaches 165°F (74°C). Move it to a clean plate and cover loosely.
- Build the base. Reduce the heat to medium. Add the onion to the same skillet and cook for 3 minutes. Stir in the garlic for 30 seconds.
- Cook the rice. Add the broth, evaporated milk, and remaining ½ teaspoon salt. Bring to a gentle simmer. Stir in the instant rice and peas, cover, turn off the heat, and leave undisturbed for 5 minutes.
- Finish and serve. Stir in the Parmesan until creamy. Add a splash of broth if the rice is thicker than you like. Return the chicken and any juices to the pan. Serve with parsley, lemon, or extra pepper at the table.
