20-Minute Cheesy Broccoli Rice Recipe

5 Main Ingredients

  • 2 cups low-sodium vegetable broth
  • 3 cups frozen broccoli florets, cut smaller if very large
  • 2 cups uncooked instant white or brown rice
  • 4 ounces cream cheese, cut into cubes
  • 1½ cups shredded cheddar cheese

Pantry basics: ½ teaspoon garlic powder, salt, and black pepper.

Instructions

  1. Wake up the broccoli. Add broth and frozen broccoli to a large skillet over medium-high heat. Bring to a simmer, cover, and cook for 4 to 5 minutes until the broccoli is just tender.
  2. Add the rice. Stir in the instant rice and garlic powder. Return to a simmer, cover, remove from the heat, and let stand for 5 minutes or according to your rice package directions.
  3. Make it creamy. Stir in the cream cheese until mostly melted and evenly distributed.
