Ingredients

  • 14 ounces fully cooked chicken sausage, sliced into ½-inch rounds
  • 1½ pounds baby potatoes, halved or quartered if larger
  • 12 ounces green beans, trimmed
  • 2 tablespoons olive oil
  • 1½ teaspoons Italian seasoning
  • ½ teaspoon kosher salt
  • ÂĽ teaspoon black pepper

Instructions

  1. Heat the oven. Set a rack in the center and heat the oven to 425°F (220°C). Line a large rimmed sheet pan with parchment for easier cleanup.
  2. Prepare the vegetables. Cut the potatoes into pieces no larger than Âľ inch so they finish on time. Add them to the pan with the green beans.
  3. Add the chicken sausage. Add the sliced fully cooked chicken sausage. Drizzle everything with olive oil, then sprinkle with Italian seasoning, salt, and pepper. Toss and spread into one layer.
  4. Roast. Roast for 22 to 25 minutes, stirring once halfway through, until the potatoes are fork-tender, the beans are browned at the edges, and the chicken sausage is hot.

Safety note: Use sausage clearly labeled fully cooked chicken sausage and verify it contains no pork. Reheat it to the package’s recommended temperature and refrigerate leftovers within 2 hours.
