20-Minute Black Bean Sheet-Pan Nachos Recipe

Ingredients
- 1 bag (about 10 to 12 oz) sturdy tortilla chips
- 1 can (15 oz / 425 g) black beans, drained and rinsed
- 1 cup frozen or canned corn, drained if canned
- 2 cups shredded cheddar or Monterey Jack cheese
- 1 cup mild salsa
Pantry basics: cooking spray or parchment paper. Optional table toppings: plain Greek yogurt or sour cream, diced avocado, chopped tomato, sliced green onion, or jalapeños for adults who want heat.
Instructions
- Heat the oven. Preheat to 400°F (205°C). Line a large rimmed sheet pan with parchment paper if you want easier cleanup.
- Build the first layer. Spread half the tortilla chips across the pan. Sprinkle with half the black beans, half the corn, and half the cheese.
- Add the second layer. Repeat with the remaining chips, beans, corn, and cheese so more chips get toppings instead of leaving everything piled only on top.
- Bake. Bake for 8 to 10 minutes, until the cheese is melted and the beans are hot.
