20-Minute Tomato & White Bean Soup Recipe

Serves: 4 · Prep: 5 minutes · Cook: 15 minutes

Ingredients

  • 2 cans (14 to 15 oz each) diced tomatoes, with juices
  • 2 cans (15 oz / 425 g each) cannellini or other white beans, drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 2 packed cups baby spinach
  • 1/2 cup finely grated Parmesan cheese

Pantry basics: 1 tablespoon olive oil, 1 teaspoon Italian seasoning, 1/2 teaspoon garlic powder, salt, and black pepper.

Instructions

  1. Start the pot. Heat the olive oil in a medium-large pot over medium heat. Add Italian seasoning and garlic powder and stir for about 20 seconds.
  2. Add the soup base. Pour in the diced tomatoes, white beans, and vegetable broth. Stir well.
  3. Simmer. Bring to a lively simmer, then reduce the heat slightly and cook uncovered for 10 minutes.
  4. Make it a little creamy. Use the back of a spoon or a potato masher to gently mash some of the beans against the side of the pot. This thickens the broth without adding cream.
  5. Finish. Stir in the spinach and cook 1 to 2 minutes until wilted. Remove from the heat, stir in the Parmesan, and season with salt and pepper to taste.

Before adding the spinach, scoop out a serving with extra beans and a little broth. Add Parmesan at the table so each person can control how cheesy the soup becomes.

Make It Cheaper

Use store-brand canned tomatoes and beans, and reduce the Parmesan slightly. The beans already provide most of the body and staying power.

Use What You Have

Frozen spinach can replace fresh spinach. Great northern beans or navy beans work instead of cannellini. Chicken broth can be used if the meal does not need to stay vegetarian.

Make It More Filling

Serve with toast, crackers, or leftover bread. The soup itself stays simple while the bread gives hungry family members an easy extra.

Cool and refrigerate leftovers promptly in a covered container for up to 4 days. Reheat gently on the stovetop or in the microwave until steaming hot. The soup will thicken in the refrigerator, so add a splash of broth or water when reheating if needed.
