Ingredients

  • 1 lb (450 g) lean ground beef
  • 1 large bell pepper, thinly sliced
  • 1 small yellow onion, thinly sliced
  • 6 slices provolone cheese
  • 4 hoagie or sub rolls

Pantry basics: 1 teaspoon cooking oil if needed, salt, black pepper, and garlic powder.

Instructions

  1. Soften the vegetables. Heat a large skillet over medium-high heat. Add a little oil if the pan needs it, then cook the pepper and onion for 4 to 5 minutes until softened.
  2. Cook the beef. Add ground beef, break it into small pieces, and season lightly with salt, pepper, and garlic powder. Cook 6 to 8 minutes, stirring occasionally, until no pink remains and the beef reaches 160°F (71°C).
  3. Melt the cheese. Spread the beef mixture into an even layer, place provolone over the top, and cover the skillet for 1 to 2 minutes until melted.
  4. Fill the rolls. Divide the cheesy beef-and-pepper mixture among the rolls and serve warm.
