Why it fits tonight: Ground turkey cooks quickly, the sauce uses basic pantry ingredients, and everyone can choose a plain bun, cheese, or pickles without changing the main dinner.
Why It Works Tonight
Sloppy joes give ground turkey a completely different job from rice skillets. The sauce is mild, the ingredient list is short, and the filling can also become tomorrow’s wrap or lunch bowl.
20-Minute Ground Turkey Sloppy Joes Recipe
Serves: 4 to 5 · Prep: 8 minutes · Cook: 12 minutes
Ingredients
- 1 pound ground turkey
- 1 small yellow onion, finely diced
- 3/4 cup tomato sauce
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon yellow mustard
- 1 teaspoon brown sugar or honey
- 4 to 5 soft hamburger buns
Pantry basics: 1 teaspoon olive oil if needed, salt, black pepper, and optional sliced pickles or shredded cheddar.
Instructions
- Cook the turkey. Heat a large skillet over medium-high heat. Add the turkey and onion and cook for 6 to 7 minutes, breaking the meat into small pieces, until no pink remains.
- Build the sauce. Stir in tomato sauce, ketchup, Worcestershire, mustard, and brown sugar or honey.
- Simmer. Reduce heat to medium-low and simmer 4 to 5 minutes until thick enough to sit on a bun.
- Season and serve. Add salt and pepper to taste. Spoon onto buns and keep cheese or pickles at the table.
Safety note: Ground turkey should reach 165°F (74°C). Refrigerate leftovers within 2 hours.

Picky-Eater Move
Set aside a little plain cooked turkey before adding the sauce, or serve the filling beside the bun.
Make It Cheaper
Use store-brand buns and stretch the filling with a drained can of white beans, lightly mashed.
Use What You Have
Whole-wheat rolls, toast, tortillas, or baked potatoes can replace hamburger buns.
Leftovers Tomorrow
Refrigerate the filling for up to 3 days. Reheat until steaming hot and use it in wraps, rice bowls, or over a baked potato.
