20-Minute Turkey Cheeseburger Rice Skillet Recipe

Main Ingredients

  • 1 pound ground turkey
  • 2 cups instant white rice
  • 2 cups low-sodium chicken broth
  • 1 cup shredded cheddar cheese
  • 2 tablespoons tomato paste
  • 1 small yellow onion, finely diced

Pantry basics: 1 teaspoon Dijon mustard, ½ teaspoon garlic powder, salt, black pepper, and optional chopped dill pickles for serving.

Instructions

  1. Cook the turkey. Heat a large skillet over medium-high heat. Add turkey and onion and cook for 6 to 7 minutes, breaking the meat apart, until no pink remains.
  2. Add burger flavor. Stir in tomato paste, Dijon, garlic powder, a small pinch of salt, and black pepper. Cook for 30 seconds.
  3. Cook the rice. Add broth and bring to a simmer. Stir in instant rice, cover, remove from heat, and let stand about 5 minutes or according to package directions.
  4. Finish with cheese. Fluff the rice, stir in ¾ cup cheddar, and sprinkle the rest on top. Cover for 1 minute to melt. Add chopped pickles only at the table if wanted.

Safety note: Ground turkey should reach 165°F (74°C). Refrigerate leftovers within 2 hours.
