Why It Works Tonight

This is a true emergency dinner: pantry beans, freezer corn, tortillas, and cheese can sit around waiting for a night when the plan collapses. It is filling, inexpensive, meatless, and does not depend on rice or pasta.

15-Minute Black Bean & Cheese Quesadillas Recipe

Serves: 4  ·  Prep: 5 minutes  ·  Cook: 10 minutes

5 Main Ingredients

  • 8 medium flour tortillas
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 cups shredded cheddar or Monterey Jack
  • ½ cup frozen corn, thawed or rinsed under warm water
  • ½ cup mild salsa, plus more for serving

Pantry basics: a little neutral oil or cooking spray, plus optional cumin.

Instructions

  1. Mix the filling. Lightly mash about half the beans in a bowl. Stir in the remaining beans, corn, and salsa.
  2. Build. Divide the bean mixture and cheese across 4 tortillas, leaving a small border. Top with the remaining tortillas.
  3. Toast. Heat a large skillet or flat griddle over medium heat and lightly oil it. Cook 2 quesadillas at a time for 2 to 3 minutes per side until crisp and the cheese is melted.
  4. Rest and slice. Let each quesadilla sit for 1 minute before cutting into wedges.

Make This Card Fit Your Night

Picky-Eater Move

Make one cheese-only quesadilla first, then add beans and corn to the others. Serve salsa only as a dip.

Make It Cheaper

Use a little less cheese and more beans. Store-brand tortillas and canned beans keep this firmly in the budget lane.

Lowest-Effort Shortcut

Skip mashing the beans. Whole beans work fine if nobody objects to the texture.

Leftovers Tomorrow

Refrigerate for up to 2 days and reheat in a dry skillet or air fryer. Assembled uncooked quesadillas can also be frozen between parchment and cooked later.
