15-Minute Beef & Bean Taco Bowls Recipe

5 Main Ingredients

  • 1 pound lean ground beef
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 cups fully cooked microwave-ready rice
  • ½ cup mild salsa
  • 1 cup shredded cheddar or Monterey Jack cheese

Pantry basics: 1 tablespoon mild taco seasoning and 2 tablespoons water.

Instructions

  1. Brown the beef. Heat a large skillet over medium-high heat. Add the ground beef and cook for 6 to 7 minutes, breaking it into small pieces, until no pink remains. Drain excess fat if needed.
  2. Season and stretch. Stir in the taco seasoning, water, black beans, and salsa. Cook for 2 minutes until the beans are hot and the mixture is saucy. Make sure the beef reaches 160°F (71°C).
  3. Heat the rice. While the beef finishes, heat the fully cooked rice according to the package directions.
  4. Build the bowls. Divide the rice among bowls, spoon the beef-and-bean mixture over the top, and finish with cheese.
  5. Customize at the table. Add extra salsa, avocado, yogurt, lettuce, or hot sauce only if you already have them.

Safety note: Cook ground beef to 160°F (71°C). Refrigerate leftovers within 2 hours.
