15-Minute Egg & Black Bean Tacos Recipe

Ingredients
- 8 large eggs
- 1 can (15 oz) black beans, drained and rinsed
- 8 small flour or corn tortillas
- 1 cup shredded cheddar or Mexican-style cheese
- 1/2 cup mild salsa
- Salt and pepper, optional pantry staples
Instructions
- Warm the beans. Add the drained black beans to a large skillet over medium heat with 2 tablespoons water. Cook 2 to 3 minutes until hot, then move them to one side of the skillet or a bowl.
- Scramble the eggs. Beat the eggs with a pinch of salt if using. Add them to the skillet and cook over medium-low heat, stirring gently, until softly set.
- Warm the tortillas. Warm tortillas according to package directions or briefly in the dry skillet.
- Build dinner. Fill each tortilla with egg and black beans. Add cheese and mild salsa at the table so each person controls the final flavor.
