  • Leftover move: Cooked pasta gets a second job

Why it fits tonight: Eggs cook quickly, leftover pasta makes the meal filling without waiting for a pot to boil, and marinara can stay on the side for anyone who wants the skillet plain.

Why It Works Tonight

This adds an egg dinner that is not another taco or potato hash, while also giving the 15-minute pasta lane a different texture and a practical leftover-use case.

15-Minute Cheesy Pasta & Egg Skillet Recipe

Serves: 4 · Prep: 5 minutes · Cook: 10 minutes

Ingredients

  • 3 cups safely refrigerated cooked short pasta
  • 8 large eggs
  • 2 cups baby spinach
  • 3/4 cup grated Parmesan cheese
  • 1 cup mild marinara sauce

Pantry basics: a little cooking oil, salt, and pepper.

Instructions

  1. Warm the pasta. Lightly oil a large nonstick skillet over medium-high heat. Add cooked pasta and cook 2 to 3 minutes, stirring occasionally, until hot with a few crisp edges.
  2. Add spinach. Stir in spinach for about 1 minute, until just wilted.
  3. Add the eggs. Beat eggs with a pinch of salt and pepper. Pour into the skillet and reduce heat to medium.
  4. Cook through. Stir gently for 3 to 4 minutes, folding the pasta through the eggs, until the eggs are fully set and reach 160°F (71°C).
  5. Finish. Sprinkle with Parmesan. Warm marinara separately in the microwave and serve it on the side or spoon it over individual portions.

Make This Card Fit Your Night

Picky-Eater Move

Keep marinara on the side and use less spinach in one section of the skillet.

Make It Cheaper

This works specifically with leftover pasta, so it turns an already-cooked ingredient into another full dinner instead of wasting it.

Use What You Have

Spaghetti or other cooked pasta can work too; cut long noodles into shorter pieces before adding them to the skillet.

Add Something Fresh

Serve sliced cucumbers, fruit, or raw vegetables on the side rather than adding another cooked component.

Leftovers Tomorrow

Because this recipe begins with previously cooked pasta, make it only with pasta that was cooled and refrigerated promptly. Refrigerate the finished skillet promptly and eat within 1 additional day, reheating until steaming hot.
