15-Minute Microwave Loaded Potato Bar Recipe

Serves: 4 · Prep: 5 minutes · Cook: about 10 minutes

Ingredients

  • 4 medium russet potatoes, scrubbed
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup mild salsa
  • 3/4 cup plain Greek yogurt or sour cream

Pantry basics: salt and pepper, if wanted.

Instructions

  1. Prep the potatoes. Pierce each potato several times with a fork and place them on a microwave-safe plate.
  2. Microwave until tender. Microwave on high for 5 minutes, carefully turn the potatoes, then continue 4 to 7 minutes until a knife slides easily into the centers. Microwave power and potato size vary, so add 1-minute bursts if needed.
  3. Warm the beans. During the final 1 to 2 minutes, place the black beans in a microwave-safe bowl and heat until steaming hot.
  4. Open carefully. Split the hot potatoes lengthwise and fluff the centers with a fork. Watch for steam.
  5. Build the bar. Put beans, cheddar, salsa, and Greek yogurt on the table and let everyone build their own potato.
