15-Minute Beef & Veggie Rice Bowls Recipe

Ingredients

  • 1 lb lean ground beef
  • 2 pouches ready-to-heat rice, about 17 oz total
  • 12 oz frozen mixed or stir-fry vegetables
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon honey

Instructions

  1. Brown the beef. Cook ground beef in a large skillet over medium-high heat for 5 to 6 minutes, breaking it into crumbles, until it reaches 160°F (71°C). Drain excess fat if needed.
  2. Add the vegetables. Stir frozen vegetables into the skillet and cook 3 to 4 minutes, until hot and tender-crisp.
  3. Make the glaze. Stir soy sauce and honey together, then pour into the skillet. Toss for 1 minute.
  4. Heat the rice. Microwave rice according to package directions while the beef and vegetables finish.
  5. Build the bowls. Divide rice among bowls and top with the beef-vegetable mixture.
