20-Minute Lemon Chicken & Broccoli Couscous Recipe

Main Ingredients
- 1 pound boneless skinless chicken breast or cutlets, cut into small bite-size pieces
- 1½ cups plain couscous
- 3 cups small broccoli florets
- 2 cups low-sodium chicken broth
- ½ cup finely grated Parmesan
- 1 lemon
Pantry basics: 1 tablespoon olive oil, ½ teaspoon garlic powder, salt, and black pepper.
Instructions
- Cook the chicken. Heat olive oil in a large deep skillet over medium-high heat. Season chicken lightly with garlic powder, salt, and pepper. Cook for 5 to 6 minutes, stirring, until cooked through.
- Steam the broccoli. Add broccoli and ¼ cup of the broth. Cover and cook for 2 minutes.
- Add couscous. Pour in the remaining broth and bring to a boil. Stir in couscous, cover, remove the skillet from the heat, and let stand for 5 minutes.
- Finish. Fluff with a fork and stir in Parmesan. Add lemon zest or a squeeze of lemon to adult portions or the whole skillet if the family likes it.
Safety note: Chicken should reach 165°F (74°C). Refrigerate leftovers within 2 hours.
