  • 12 oz short pasta, such as penne or rotini
  • 2 cups shredded cooked chicken
  • 4 oz cream cheese, cubed
  • 1 cup frozen peas
  • 4 cups low-sodium chicken broth, plus a little more if needed

Pantry basics: salt, black pepper, and optional garlic powder.

Instructions

  1. Start the pasta. Add the pasta and chicken broth to a large pot. Bring to a boil over medium-high heat.
  2. Simmer until almost tender. Reduce to a steady simmer and cook for 10 to 12 minutes, stirring often. Add a splash of broth or water if the pot gets too dry before the pasta is ready.
  3. Add the easy stuff. Stir in the shredded chicken, cream cheese, and frozen peas.
  4. Make it creamy. Cook for 3 to 5 minutes, stirring until the cream cheese melts into the remaining liquid and the chicken is steaming hot.
  5. Finish. Season with salt, pepper, and optional garlic powder. Rest for 2 minutes so the sauce thickens before serving.
