15-Minute Veggie Egg Fried Rice Recipe

Ingredients

  • 4 cups cold cooked rice, properly refrigerated
  • 4 large eggs, lightly beaten
  • 1 tablespoon neutral cooking oil
  • 2 cups frozen peas and carrots
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon toasted sesame oil, optional
  • 2 green onions, thinly sliced, optional

Instructions

  1. Scramble the eggs. Heat a large skillet over medium-high heat. Add half the cooking oil and the beaten eggs. Stir for 1 to 2 minutes until fully set, then move the eggs to a clean plate.
  2. Heat the vegetables. Add the remaining oil and frozen peas and carrots. Cook for 2 to 3 minutes until hot and most surface moisture has evaporated.
  3. Fry the rice. Add the cold rice, breaking up clumps with the spoon. Cook for 3 to 4 minutes, stirring and pressing the rice against the hot pan so it heats evenly.
  4. Season. Add the soy sauce and sesame oil if using. Return the cooked eggs and toss until everything is evenly combined.
  5. Heat safely and serve. Continue cooking until the rice mixture is steaming hot throughout and reaches 165°F (74°C). Add green onions at the table if using.

Leftover-rice safety: Use rice that was cooled promptly and refrigerated within 2 hours of cooking. Keep cooked rice refrigerated at 40°F (4°C) or below, use it within 3 to 4 days, and reheat leftovers to 165°F (74°C). If the rice sat at room temperature for more than 2 hours, discard it rather than using it here.
