15-Minute Beef & Bean Taco Bowls Recipe

- 1 pound lean ground beef
- 1 can (15 ounces) black beans, drained and rinsed
- 2 cups fully cooked microwave-ready rice
- ½ cup mild salsa
- 1 cup shredded cheddar or Monterey Jack cheese
Pantry basics: 1 tablespoon mild taco seasoning and 2 tablespoons water.
Instructions
- Brown the beef. Heat a large skillet over medium-high heat. Add the ground beef and cook for 6 to 7 minutes, breaking it into small pieces, until no pink remains. Drain excess fat if needed.
- Season and stretch. Stir in the taco seasoning, water, black beans, and salsa. Cook for 2 minutes until the beans are hot and the mixture is saucy. Make sure the beef reaches 160°F (71°C).
- Heat the rice. While the beef finishes, heat the fully cooked rice according to the package directions.
- Build the bowls. Divide the rice among bowls, spoon the beef-and-bean mixture over the top, and finish with cheese.
- Customize at the table. Add extra salsa, avocado, yogurt, lettuce, or hot sauce only if you already have them.
Safety note: Cook ground beef to 160°F (71°C). Refrigerate leftovers within 2 hours.
