15-Minute Egg & Frozen Veggie Noodle Stir-Fry Recipe

Ingredients
- 4 packs (about 3 oz / 85 g each) quick-cooking ramen-style noodles, seasoning packets discarded
- 4 large eggs
- 3 cups frozen mixed vegetables or frozen stir-fry vegetables
- 1/4 cup low-sodium soy sauce
- 1 tablespoon honey
Pantry basics: 1 to 2 teaspoons neutral cooking oil and water. Optional table extras: sliced green onion, sesame seeds, or chili sauce for adults.
Instructions
- Soften the noodles. Put the noodles in a large heat-safe bowl and cover with very hot water. Let them stand for 3 to 4 minutes, just until flexible, then drain well. Follow the package directions if your noodles require a different method.
- Mix the sauce. Stir the soy sauce and honey together in a small cup or bowl.
- Cook the eggs. Heat a large nonstick skillet over medium-high heat with a little oil. Beat the eggs, add them to the skillet, and scramble until fully set with no liquid egg remaining, about 1 to 2 minutes. Transfer to the noodle bowl.
- Cook the vegetables. Add the frozen vegetables to the same skillet. Cook for 3 to 4 minutes, stirring often, until hot and tender-crisp.
- Finish the stir-fry. Add the drained noodles, cooked eggs, and sauce. Toss for 1 to 2 minutes until everything is steaming hot and evenly coated. Serve immediately.
