Weeknight Card · low-energy dinner
5-Ingredient Creamy Chicken Pasta
Creamy, cozy pasta with cooked chicken and peas, made in one pot with five main ingredients for the nights when your energy has already clocked out.
🌙 Your Weeknight Card
Why it fits tonight: Everything cooks in one pot, cooked chicken skips the longest prep step, and the peas can stay in the pot or move politely to the side of a picky eater’s plate.
Why It Works Tonight
This dinner keeps the grocery list short without tasting like a compromise. The pasta cooks directly in broth, cream cheese turns the remaining liquid into sauce, and leftover or rotisserie chicken makes the whole thing feel suspiciously easy.
5-Ingredient Creamy Chicken Pasta Recipe
Serves: 4 to 5 · Prep: 5 minutes · Cook: about 20 minutes
5 Main Ingredients
- 12 oz short pasta, such as penne or rotini
- 2 cups shredded cooked chicken
- 4 oz cream cheese, cubed
- 1 cup frozen peas
- 4 cups low-sodium chicken broth, plus a little more if needed
Pantry basics: salt, black pepper, and optional garlic powder.
Instructions
- Start the pasta. Add the pasta and chicken broth to a large pot. Bring to a boil over medium-high heat.
- Simmer until almost tender. Reduce to a steady simmer and cook for 10 to 12 minutes, stirring often. Add a splash of broth or water if the pot gets too dry before the pasta is ready.
- Add the easy stuff. Stir in the shredded chicken, cream cheese, and frozen peas.
- Make it creamy. Cook for 3 to 5 minutes, stirring until the cream cheese melts into the remaining liquid and the chicken is steaming hot.
- Finish. Season with salt, pepper, and optional garlic powder. Rest for 2 minutes so the sauce thickens before serving.
Safety note: Reheat cooked chicken until steaming hot, ideally 165°F (74°C), and refrigerate leftovers within 2 hours.
Make This Card Fit Your Night
Make It Cheaper
Use leftover chicken instead of buying it specifically for this meal. Store-brand pasta, frozen peas, and block cream cheese keep the total pleasantly boring.
Picky-Eater Move
Keep the base mild and scoop out a serving before stirring in the peas, or serve a few peas separately. Same pot, no second dinner.
Lowest-Effort Shortcut
Use shredded rotisserie chicken and pre-cubed cream cheese. Tonight the cutting board can enjoy paid leave.
Use What You Have
Frozen corn can replace peas, cooked turkey can replace chicken, and another short pasta shape works as long as its cooking time is similar.
Leftovers Tomorrow
Refrigerate in a covered container for up to 3 days. Reheat gently with a splash of broth or water to loosen the sauce. For lunch, add a handful of spinach while reheating or tuck the pasta into a thermos while hot.
Freezing
This pasta is better refrigerated than frozen because cream-cheese sauces can become grainier after thawing.
