Pizza Quesadilla Recipe

5 Main Ingredients

  • 8 medium flour tortillas
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella
  • 3 oz turkey pepperoni, or chopped cooked chicken
  • 1 small bell pepper, very finely diced, optional for picky eaters

Pantry basics: a little olive oil or cooking spray, plus dried oregano if you like.

No-pork note: Use turkey pepperoni, chicken pepperoni, cooked chicken, or a meat-free topping. Do not use pork pepperoni.

Instructions

  1. Build the first layer. Lay 4 tortillas on a board. Spread each with about 2 tablespoons pizza sauce, leaving a small border around the edge.
  2. Add the fillings. Sprinkle with mozzarella, turkey pepperoni or chicken, and a little bell pepper if using. Top with the remaining tortillas.
  3. Toast. Heat a large skillet over medium heat and lightly coat with oil or spray. Cook each quesadilla for 2 to 3 minutes per side until golden and the cheese is melted.
  4. Slice and dip. Rest for 1 minute, cut into wedges, and serve with extra warm pizza sauce for dipping.
