15-Minute Pizza Beans Recipe
Serves: 4 · Prep: 4 minutes · Cook: 11 minutes
4 Main Ingredients
- 2 cans (15 ounces each) cannellini or Great Northern beans, drained and rinsed
- 2 cups marinara or mild pizza sauce
- 2 cups baby spinach, roughly chopped if leaves are large
- 1½ cups shredded mozzarella cheese
Pantry basics: ½ teaspoon Italian seasoning, a pinch of salt, and black pepper. Optional for serving: toast or crackers.
Instructions
- Start the sauce. Add the marinara, drained beans, and Italian seasoning to a large skillet over medium heat. Stir and bring to a gentle simmer.
- Warm the beans. Simmer for 5 to 6 minutes, stirring once or twice, until the beans are hot and the sauce thickens slightly.
- Add the green stuff quietly. Stir in the spinach and cook for about 1 minute, just until wilted.
- Make it pizza. Sprinkle mozzarella evenly over the skillet. Reduce the heat to low, cover, and cook for 2 to 3 minutes until the cheese is fully melted.
- Serve. Spoon into bowls or onto plates. Add toast for scooping if that helps sell the whole “pizza” situation at your table.

Before adding spinach, scoop one child-size portion of saucy beans into a small pan or bowl and top it with cheese separately. Familiar first, greenery later.
Make It Cheaper
Use store-brand beans and marinara, and reduce mozzarella to 1 cup. The beans still make the dinner filling.
Lowest-Effort Shortcut
Skip chopping the spinach and use baby leaves straight from the bag. Dinner survives beautifully without a cutting board.
Use What You Have
Kidney beans or chickpeas can stand in for white beans. Use cheddar-mozzarella blend if that is what is already open in the fridge.
