20-Minute Turkey Cheeseburger Rice Skillet Recipe
Serves: 4 to 5 · Prep: 7 minutes · Cook: 13 minutes
Main Ingredients
- 1 pound ground turkey
- 2 cups instant white rice
- 2 cups low-sodium chicken broth
- 1 cup shredded cheddar cheese
- 2 tablespoons tomato paste
- 1 small yellow onion, finely diced
Pantry basics: 1 teaspoon Dijon mustard, ½ teaspoon garlic powder, salt, black pepper, and optional chopped dill pickles for serving.
Instructions
- Cook the turkey. Heat a large skillet over medium-high heat. Add turkey and onion and cook for 6 to 7 minutes, breaking the meat apart, until no pink remains.
- Add burger flavor. Stir in tomato paste, Dijon, garlic powder, a small pinch of salt, and black pepper. Cook for 30 seconds.
- Cook the rice. Add broth and bring to a simmer. Stir in instant rice, cover, remove from heat, and let stand about 5 minutes or according to package directions.
- Finish with cheese. Fluff the rice, stir in ¾ cup cheddar, and sprinkle the rest on top. Cover for 1 minute to melt. Add chopped pickles only at the table if wanted.
Safety note: Ground turkey should reach 165°F (74°C). Refrigerate leftovers within 2 hours.
Make This Card Fit Your Night
Picky-Eater Move
Skip pickles in the main skillet and keep mustard mild. The base reads mostly as cheesy turkey and rice.
Make It Cheaper
Use ¾ pound turkey and add a drained can of white or black beans after browning the meat.
Use What You Have
Monterey Jack can replace cheddar. Frozen diced onion works when chopping energy has left the building.
Leftovers Tomorrow
Refrigerate for up to 3 days. Reheat with a splash of broth or water. Leftovers also work well in a tortilla or lettuce wrap.
