Ingredients

  • 1 tablespoon cooking oil
  • 1 bag (20 oz) frozen diced potatoes or hash-brown potatoes
  • 6 large eggs
  • 2 cups baby spinach
  • 1 cup shredded cheddar cheese
  • Salt and pepper, optional pantry staples

Instructions

  1. Crisp the potatoes. Heat oil in a large nonstick skillet over medium-high heat. Add frozen diced potatoes in an even layer and cook 8 to 10 minutes, stirring occasionally, until hot and browned in spots.
  2. Add the spinach. Stir in the spinach and cook about 1 minute, just until wilted.
  3. Add the eggs. Lower heat to medium. Make six small spaces in the potato mixture and crack an egg into each one. Cover and cook 4 to 5 minutes, or until the whites are fully set and the yolks are cooked to your family’s preference.
  4. Finish with cheese. Sprinkle cheddar over the skillet, cover for 1 minute to melt, then divide into four portions.
