15-Minute Rotisserie Chicken Quesadillas
Golden chicken-and-cheese quesadillas use a rotisserie shortcut to put a flexible family dinner on the table in 15 minutes.
🌙 Your Weeknight Card
Why it fits tonight: Rotisserie chicken removes the longest step, the filling stays mild, and each quesadilla can be customized without making separate dinners.
Cost is an estimate based on typical U.S. grocery prices. Store, region, brands, and sales will change the total.
Why It Works Tonight
- Fast means genuinely fast: the filling is already cooked, so dinner only needs assembly and crisping.
- Easy to divide: make some with chicken and cheese only, then add salsa to the rest.
- Works without sides: serve with sliced fruit or raw vegetables only if you have them.
15-Minute Rotisserie Chicken Quesadillas Recipe
Serves: 4 servings · Prep: 7 minutes · Cook: 8 minutes · Total: 15 minutes
Ingredients
- 8 medium flour tortillas
- 2 cups shredded cooked rotisserie chicken
- 2 cups shredded cheddar or Monterey Jack cheese
- ½ cup mild salsa, plus more for serving
- 1 teaspoon olive oil or butter, divided
Instructions
- Build the quesadillas. Place four tortillas on a work surface. Divide the chicken and cheese over them, keeping the filling about ½ inch from the edges. Spoon mild salsa over the filling, then top with the remaining tortillas.
- Heat the skillet. Warm a large nonstick skillet over medium heat and brush it lightly with oil or butter.
- Cook until crisp. Cook one quesadilla at a time for 2 minutes per side, pressing gently, until golden and the cheese has melted. Add a little more oil between batches if needed.
- Rest and slice. Move each quesadilla to a board for 1 minute before cutting into wedges. Serve with extra salsa at the table.
Safety note: Use freshly purchased or properly refrigerated rotisserie chicken and reheat the filling until steaming hot, ideally 165°F (74°C).
Make It Work Tonight
Make It Cheaper
Use less chicken and add rinsed black beans. Store-brand tortillas and block cheese grated at home usually cost less.
Easy Plate
Leave salsa out of selected quesadillas and serve it on the side. Same dinner, simpler plate, no second meal.
Use What You Have
Swap cheddar for mozzarella, Colby, or a Mexican-style blend. Corn or finely diced bell pepper can stretch the filling.
Lowest-Effort Shortcut
Buy pre-shredded cheese and pull the rotisserie chicken while it is still warm, then refrigerate it until dinner.
Leftovers Tomorrow
Refrigerate cooked wedges in a covered container for up to 2 days. Reheat in a dry skillet or air fryer so the tortillas become crisp again.
Freezing
Freeze assembled, uncooked quesadillas between sheets of parchment for up to 1 month. Cook from frozen over medium-low heat, allowing extra time for the center to heat through.
