🌙 Your Weeknight Card
Why it fits tonight: The whole dinner roasts together, every ingredient stays recognizable for selective eaters, and cleanup is limited to one lined pan.
Why It Works Tonight
- One pan, no juggling: the chicken sausage, potatoes, and green beans share one roasting time.
- Five main ingredients: chicken sausage, potatoes, green beans, olive oil, and seasoning do the work.
- Easy to serve separately: nothing is mixed into a sauce, so each person can choose what lands on the plate.
Sheet-Pan Chicken Sausage, Potatoes & Green Beans Recipe
Serves: 4 to 5 servings · Prep: 10 minutes · Cook: 25 minutes · Total: 35 minutes
Ingredients
- 14 ounces fully cooked chicken sausage, sliced into ½-inch rounds
- 1½ pounds baby potatoes, halved or quartered if larger
- 12 ounces green beans, trimmed
- 2 tablespoons olive oil
- 1½ teaspoons Italian seasoning
- ½ teaspoon kosher salt
- ÂĽ teaspoon black pepper
Instructions
- Heat the oven. Set a rack in the center and heat the oven to 425°F (220°C). Line a large rimmed sheet pan with parchment for easier cleanup.
- Prepare the vegetables. Cut the potatoes into pieces no larger than Âľ inch so they finish on time. Add them to the pan with the green beans.
- Add the chicken sausage. Add the sliced fully cooked chicken sausage. Drizzle everything with olive oil, then sprinkle with Italian seasoning, salt, and pepper. Toss and spread into one layer.
- Roast. Roast for 22 to 25 minutes, stirring once halfway through, until the potatoes are fork-tender, the beans are browned at the edges, and the chicken sausage is hot.
Safety note: Use sausage clearly labeled fully cooked chicken sausage and verify it contains no pork. Reheat it to the package’s recommended temperature and refrigerate leftovers within 2 hours.
Make This Card Fit Your Night
Make It Cheaper
Use more potatoes and green beans with a smaller package of chicken sausage. Buy whichever fresh or frozen green beans offer the better price.
Make It Kid-Friendly
Keep the pieces separate on the tray and leave one section lightly seasoned. Serve ketchup or a familiar dip at the table if useful.
Use What You Have
Swap green beans for broccoli florets or sliced bell peppers. Turkey sausage or clearly labeled beef sausage can replace chicken sausage; never use pork sausage.
Lowest-Effort Shortcut
Use microwave-ready baby potatoes and pre-trimmed green beans, reducing the roasting time as needed.
Leftovers Tomorrow
Refrigerate for up to 3 days. Reheat on a sheet pan or in an air fryer. Chop leftovers and fold them into scrambled eggs, a grain bowl, or a warm wrap.
Freezing
Freeze the cooked chicken sausage separately if useful. The potatoes and green beans are best refrigerated because freezing softens their texture.
