One-Pot Cheeseburger Macaroni Recipe

- 1 lb lean ground beef
- 1 small yellow onion, finely diced
- 2 tablespoons tomato paste
- 1 teaspoon Dijon mustard
- 1 teaspoon smoked paprika
- 2½ cups low-sodium beef broth
- 1 cup milk
- 10 oz elbow macaroni
- 1½ cups shredded cheddar cheese
- 1 to 2 teaspoons pickle brine, optional but recommended
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
Instructions
- Brown the beef. Add the ground beef and onion to a large deep skillet or pot over medium-high heat. Cook for 6 to 7 minutes, breaking up the beef, until browned and the onion is soft. Drain excess fat if needed.
- Build the sauce. Stir in tomato paste, Dijon, smoked paprika, garlic powder, a small pinch of salt, and black pepper. Cook for 30 seconds.
- Cook the pasta in the same pot. Add beef broth, milk, and macaroni. Bring to a gentle boil, then reduce to medium. Cook uncovered for 10 to 12 minutes, stirring often, until the pasta is tender and the sauce has thickened.
- Make it cheeseburger-y. Remove from heat. Stir in cheddar until creamy, then add 1 teaspoon pickle brine. Taste before adding the second teaspoon.
- Rest and serve. Let the pot sit for 2 minutes. The sauce will tighten slightly as everyone mysteriously appears in the kitchen.
