15-Minute Black Bean & Cheese Quesadillas Recipe

- 8 medium flour tortillas
- 1 can (15 ounces) black beans, drained and rinsed
- 2 cups shredded cheddar or Monterey Jack
- ½ cup frozen corn, thawed or rinsed under warm water
- ½ cup mild salsa, plus more for serving
Pantry basics: a little neutral oil or cooking spray, plus optional cumin.
Instructions
- Mix the filling. Lightly mash about half the beans in a bowl. Stir in the remaining beans, corn, and salsa.
- Build. Divide the bean mixture and cheese across 4 tortillas, leaving a small border. Top with the remaining tortillas.
- Toast. Heat a large skillet or flat griddle over medium heat and lightly oil it. Cook 2 quesadillas at a time for 2 to 3 minutes per side until crisp and the cheese is melted.
- Rest and slice. Let each quesadilla sit for 1 minute before cutting into wedges.
