  • 1¼ pounds thin-sliced boneless skinless chicken breast cutlets
  • 1 tablespoon olive oil
  • 1½ cups frozen peas
  • 2 tablespoons unsalted butter
  • 1 medium lemon

Pantry basics: ½ teaspoon garlic powder, ½ teaspoon kosher salt, and ¼ teaspoon black pepper.

Instructions

  1. Season the chicken. Pat the cutlets dry. Season both sides with the garlic powder, salt, and black pepper.
  2. Sear the first side. Heat the olive oil in a large skillet over medium-high heat. Add the chicken in one layer and cook for 3 to 4 minutes without moving it.
  3. Flip and finish. Turn the chicken and cook for 2 to 3 minutes more, until the thickest part reaches 165°F (74°C). Transfer the chicken to a clean plate.
  4. Cook the peas. Add the frozen peas and 2 tablespoons water to the same skillet. Cover for 2 minutes, then uncover and stir until hot.
  5. Make the lemon butter. Reduce the heat to low. Add the butter, finely grated zest from half the lemon, and 1 tablespoon lemon juice. Stir until the butter melts, then return the chicken and any juices to the skillet for about 1 minute. Serve with extra lemon at the table if wanted.
