Ingredients
- 1¼ pounds boneless skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 tablespoon olive oil
- 3 cups small broccoli florets
- ⅓ cup low-sodium chicken broth
- 2 tablespoons honey
- 2 tablespoons low-sodium soy sauce
- 2 cloves garlic, minced
- 1 tablespoon cornstarch mixed with 1 tablespoon cold water
Instructions
- Mix the sauce. Stir together the broth, honey, soy sauce, and garlic in a small cup. Keep the cornstarch mixture separate.
- Cook the chicken. Heat the olive oil in a large skillet over medium-high heat. Add the chicken in one layer and cook for 5 to 6 minutes, stirring occasionally, until browned and nearly cooked through.
- Add the broccoli. Add the broccoli and 2 tablespoons of water. Cover for 2 minutes, then uncover and stir until the broccoli is bright green and crisp-tender.
- Glaze the skillet. Pour in the honey-garlic sauce. Bring to a simmer, stir in the cornstarch mixture, and cook for 1 to 2 minutes until glossy and thickened.
- Check and serve. Make sure the thickest chicken pieces reach 165°F (74°C), then remove from the heat and serve.
