Creamy One-Pan Chicken & Rice Recipe

Ingredients

  • 1¼ pounds thin chicken cutlets (about 4 to 5)
  • 1 teaspoon kosher salt, divided
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper, plus more to serve
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1½ cups low-sodium chicken broth
  • 1 cup evaporated milk
  • 2 cups instant white rice
  • 1 cup frozen peas
  • ½ cup finely grated Parmesan
  • Optional: chopped parsley and lemon wedges

Instructions

  1. Season the chicken. Pat the cutlets dry. Season both sides with ½ teaspoon salt, the garlic powder, and black pepper.
  2. Brown the chicken. Heat the oil in a large, deep skillet over medium-high heat. Cook the chicken for 3 to 4 minutes per side, until golden and the thickest part reaches 165°F (74°C). Move it to a clean plate and cover loosely.
  3. Build the base. Reduce the heat to medium. Add the onion to the same skillet and cook for 3 minutes. Stir in the garlic for 30 seconds.
  4. Cook the rice. Add the broth, evaporated milk, and remaining ½ teaspoon salt. Bring to a gentle simmer. Stir in the instant rice and peas, cover, turn off the heat, and leave undisturbed for 5 minutes.
  5. Finish and serve. Stir in the Parmesan until creamy. Add a splash of broth if the rice is thicker than you like. Return the chicken and any juices to the pan. Serve with parsley, lemon, or extra pepper at the table.
